How to Break Down a Chicken

Why Learning to Break Down a Whole Chicken is a Game-Changer:
Not only is it more affordable to buy a whole chicken, but it also helps reduce food waste and gives you full control over how you use each cut. Learning simple, practical kitchen skills like this doesn’t just save money, it makes you a more confident, capable cook.

Once you get the hang of it, breaking down a chicken takes just a few minutes and opens up so many meal possibilities. Plus, nothing goes to waste and you can even use the leftover bones to make a nourishing homemade stock (which I’ll show you how to do in the next video!).

Step-by-Step: How to Break Down a Chicken

  1. Remove the leg/thighs (Marylands):
    Slice through the skin between the leg and breast, then gently pull the leg away and cut through the joint.

  2. Cut off the wings:
    Find the joint where the wing connects to the body and cut through it cleanly.

  3. Separate the breast:
    Use a sharp knife to cut along one side of the breastbone and follow the curve down to remove the breast. Repeat on the other side.

  4. Save the carcass:
    Set the bones aside — they’re perfect for making a deeply nourishing chicken stock from scratch.
