Chocolate Olive Oil Mousse

Chocolate Olive Oil Mousse
Ingredients:
180g 60% dark chocolate
¼ cup extra virgin olive oil
Large pinch of sea salt
300mL thickened cream
Toppings:
Fresh strawberries
Crushed hazelnuts
Fresh mint
Method:
Melt the Chocolate:
Break the dark chocolate into small pieces and place it in a heatproof bowl.
Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.
Add Olive Oil & Salt:
Once the chocolate has cooled slightly, whisk in the extra virgin olive oil and a large pinch of sea salt until the mixture is smooth and glossy.
Whip the Cream:
In a separate bowl, whip the thickened cream until soft peaks form. Be careful not to overwhip.
Combine Mixtures:
Gently fold one-third of the whipped cream into the chocolate mixture to loosen it.
Then, carefully fold in the remaining whipped cream in two batches until fully incorporated. Be gentle to maintain the mousse’s airy texture.
Chill:
Spoon the mousse into serving glasses or bowls.
Cover and refrigerate for at least 2 hours, or until set.
Serve:
Before serving, top with fresh strawberries, crushed hazelnuts, and mint leaves for a burst of flavour and texture.
