One-Tray Baked Scrambled Eggs

Ingredients

For the eggs:

  • 1 cup baby spinach, sliced

  • 2 spring onions, sliced

  • 4 eggs

  • 1 tbsp light cream

  • 50g feta cheese

  • 1 tbsp pesto

  • Salt & black pepper

For the smashed avocado:

  • 1 ripe avocado

  • Juice of ½ lime

  • Salt & pepper

Method

  1. Preheat your oven to 180°C and lightly grease a small baking tray.

  2. Add the spinach, spring onion, eggs, cream, feta, pesto, salt, and pepper into the tray and give it a light mix.

  3. Bake for 15 minutes, or until the eggs are just cooked through.

  4. Remove from the oven and use a spoon to mash the feta and eggs together, creating that creamy, scrambled texture.

  5. While that’s baking, mash your avocado with lime juice, salt, and pepper.

  6. Serve your baked eggs over smashed avo with a sprinkle of fresh coriander and your favourite toast.
