Ingredients (Serves 2–3)
Pancakes:
1 banana
1 egg
1–2 tsp maple syrup
50g butter, melted
Pinch of salt
1 cup self-raising flour
1 tsp cinnamon
1 cup milk
Caramelised Bananas:
1 banana, sliced
1 tbsp butter
½ tbsp brown sugar
Sprinkle of cinnamon
Method
Make the Pancakes
Mash the banana in a bowl, then whisk in the egg, maple syrup, melted butter, and salt.
Add the flour and cinnamon, then gradually pour in the milk until a smooth batter forms.
Cook the Pancakes
Heat a non-stick pan over medium heat and lightly grease with butter.
Spoon the batter into the pan and cook until bubbles appear on top. Flip and cook until golden brown on both sides.
Caramelise the Bananas
In a small pan, melt the butter, then add banana slices, brown sugar, and cinnamon.
Cook for 1–2 minutes until soft, golden, and caramelised.
Assemble
Stack the pancakes, spoon over the caramelised bananas, and drizzle with a little extra maple syrup if desired.
