Hot Chilli Honey Chicken Bites

Ingredients (Serves 2–3)

Chicken:

  • 500g chicken thigh or breast, cut into bite-sized pieces

  • 2–4 tbsp Beerenberg Hot Chilli Honey (adjust to your spice preference)

  • 1 tbsp tamari

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • Pinch of ground ginger

  • Juice & zest of ½ lime

  • Salt & pepper, to taste

Simple Slaw:

  • 2 cups shredded cabbage

  • 2 spring onions, sliced

  • Handful of coriander, chopped

  • Dressing: 1 tsp olive oil + 1 tsp Beerenberg Hot Chilli Honey + 1 tbsp apple cider vinegar

To Serve:

  • 1 cup cooked rice

Method

  1. Marinate the Chicken
    In a bowl, combine the hot chilli honey, tamari, olive oil, garlic, lime juice, zest, ginger, salt, and pepper. Add the chicken pieces and toss well. Let marinate for at least 10 minutes (or up to 2 hours if you have time).

  2. Cook the Chicken
    Heat a skillet over medium-high. Add the chicken (in batches if needed) and cook until golden, caramelised, and cooked through (about 8–10 minutes).

  3. Make the Slaw
    In a large bowl, toss together the cabbage, spring onion, and coriander. Mix the dressing ingredients separately, then pour over the slaw and toss to combine.

  4. Assemble
    Serve the chicken bites over fluffy rice with a side of slaw.

  5. Finish with Flavour
    For extra punch, drizzle more hot chilli honey over the top and sprinkle with sesame seeds before serving.
