Oat Blend:

  • 2 cups rolled oats

  • 1/2 cup chia seeds

  • 1/3 cup Greek yoghurt (or coconut yoghurt for dairy-free)

  • 1 tbsp almond or peanut butter

  • 1 tbsp Happy Way Marine Collagen – Berry

  • 1 scoop Happy Way Vanilla Protein

  • 1/2 cup milk of choice

Berry Jam:

  • 1 cup frozen berries

  • Juice of 1/2 lemon

  • Pinch of salt

  • 1 tsp maple syrup

Optional Topping:

  • Thin layer of melted dark chocolate

  • Chopped nuts or seeds

Method

1. Make the Berry Jam:
In a small saucepan, add berries, lemon juice, salt and maple syrup. Cook over low heat, stirring and mashing with a fork until it reaches a jammy texture (5–7 minutes). Set aside to cool.

2. Blend the Oats:
Add all oat blend ingredients to a high-speed blender or food processor. Blend until smooth and creamy.

3. Layer it Up:
Spoon a layer of berry jam into jars or containers, followed by the blended oat mixture. Repeat layers if desired.

4. Optional Sweet Finish:
Top with a thin layer of melted dark chocolate and chill in the fridge to set.

5. Store:
Keep in the fridge for up to 4 days. Perfect for breakfast or an afternoon pick-me-up.
