Mood-Boosting LCM Bars

These bars are a fun, nourishing twist on the nostalgic lunchbox treat, without all the artificial additives. Packed with protein, healthy fats, fibre and rich cacao, they’re the perfect snack to keep your energy and mood steady throughout the day. They're quick to prep, easy to customise, and ideal for both adults and kids.

Ingredients

Bars:

  • 2 cups brown rice puffs

  • 1 cup soy protein crisps

  • 1/4 cup cacao powder

  • 1/4 cup desiccated coconut

  • Pinch of sea salt

  • 1/3 cup natural peanut butter

  • 2 tbsp coconut oil

  • 2 tbsp honey or rice malt syrup

Topping:

  • 60g dark chocolate, melted

  • 1 tbsp crushed peanuts

  • Pinch of sea salt

Method

Prep the Tin:
Line a small square baking tin with baking paper.

Melt the Wet Ingredients:
In a saucepan over low heat, melt together the peanut butter, coconut oil, and honey (or rice malt syrup) until smooth and combined.

Mix the Dry Ingredients:
In a large bowl, combine the brown rice puffs, soy protein crisps, cacao powder, desiccated coconut, and sea salt.

Combine:
Pour the melted wet mixture over the dry ingredients and mix well until everything is evenly coated.

Press & Set:
Transfer the mixture into the lined tin and press down firmly with the back of a spoon or your hands to create an even layer.

Add the Topping:
Drizzle melted dark chocolate over the top, then sprinkle with crushed peanuts and a pinch of sea salt.

Chill:
Place in the fridge to set for at least 1 hour (or until firm).

Slice & Enjoy:
Once set, slice into bars or squares and enjoy! Store in an airtight container in the fridge for up to one week.

TIP: These bars are perfect for lunchboxes, a post-workout snack, or a sweet-but-healthy dessert. You can swap the peanut butter for almond or sunflower seed butter if needed.
