5-Minute Peanut & Sesame Soba Noodles
Ingredients
1 packet soba noodles
1 tbsp natural peanut butter
1 tbsp tamari
1 tsp sesame oil
1 tsp rice wine vinegar
1 tsp honey
1 clove garlic, minced
Boiling water (to loosen the sauce)
To finish:
Spring onion, sliced
Sesame seeds
Crispy chilli oil (to taste)
Method
Bring a pot of water to the boil and cook the soba noodles according to the packet instructions. Drain and set aside, reserving a small amount of the cooking water if needed.
In a bowl, whisk together the peanut butter, tamari, sesame oil, rice wine vinegar, honey and minced garlic until smooth.
Add a few tablespoons of boiling water to the mixture and whisk until the sauce becomes creamy and pourable.
Add the warm soba noodles to the bowl and toss well so they are evenly coated in the sauce. If needed, add a little more hot water to loosen the sauce.
Finish with sliced spring onion, sesame seeds and crispy chilli oil to taste.
Serve immediately and enjoy.
