Ingredients
Roasted Tomatoes:
1 punnet vine-ripened tomatoes
Olive oil
Salt & pepper
Whipped Ricotta:
1 punnet smooth ricotta
Zest & juice of ½ lemon
1 tbsp thickened cream
1 tsp honey
Salt & pepper
To Assemble:
Toasted sourdough
2 tbsp Beerenberg Caramelised Onion
Method
Roast tomatoes: Toss with olive oil, salt, pepper. Roast at 200°C for 15 minutes.
Make whipped ricotta: Mix ricotta, lemon, cream, honey, salt & pepper until smooth.
Assemble: Spread ricotta over toasted sourdough, top with tomatoes, then finish with caramelised onion.
