Ingredients

Roasted Tomatoes:

  • 1 punnet vine-ripened tomatoes

  • Olive oil

  • Salt & pepper

Whipped Ricotta:

  • 1 punnet smooth ricotta

  • Zest & juice of ½ lemon

  • 1 tbsp thickened cream

  • 1 tsp honey

  • Salt & pepper

To Assemble:

  • Toasted sourdough

  • 2 tbsp Beerenberg Caramelised Onion

Method

  1. Roast tomatoes: Toss with olive oil, salt, pepper. Roast at 200°C for 15 minutes.

  2. Make whipped ricotta: Mix ricotta, lemon, cream, honey, salt & pepper until smooth.

  3. Assemble: Spread ricotta over toasted sourdough, top with tomatoes, then finish with caramelised onion.
