Mood Boosting Baked Eggs

Ingredients (Serves 2–3)

  • 1/3 brown onion, sliced

  • 2 garlic cloves, roughly chopped

  • 1 red capsicum, sliced

  • 1 tbsp olive oil

  • 250mL passata or Napolitana sauce

  • 1 tsp smoked paprika

  • 1/2 tsp dried chilli flakes (optional)

  • 1–2 handfuls baby spinach, chopped

  • 3–4 eggs

To Serve

  • Fresh parsley

  • Crumbled feta

  • Sourdough

Method

  1. Heat olive oil in a pan over medium heat

  2. Add onion, garlic and capsicum and cook until softened

  3. Stir through smoked paprika and chilli flakes

  4. Pour in passata and allow to simmer for 5–10 minutes

  5. Add spinach and cook until wilted

  6. Create small wells in the sauce and crack in the eggs

  7. Place a lid on the pan and allow the eggs to steam for 4–5 minutes, or until cooked to your liking

  8. Finish with parsley, feta and serve with sourdough
