Golden Chicken Soup
Ingredients
1 whole chicken
Extra virgin olive oil
Vegetables
3 carrots, diced
3 celery stalks, diced
1 leek, halved and sliced
1 brown onion, diced
4 cloves garlic, crushed
50g piece ginger, finely chopped
2 tbsp parsley stems, finely chopped
Herbs & Spices
1½ tsp ground turmeric
½ tsp chilli powder
½ tsp garlic powder
½ tsp onion powder
1 tsp mixed dried Italian herbs
1 tsp ground black pepper
Pinch sea salt
Broth Ingredients
2 litres chicken or vegetable stock
1½ cups water
2 bay leaves
2 sprigs rosemary
1 parmesan rind
To Finish
1 tin butter beans, drained and rinsed
150g baby spinach, roughly chopped
Handful fresh parsley, chopped
Optional
½ packet spaghetti
Method
Heat olive oil in a large soup pot and brown the whole chicken on all sides until golden.
Remove the chicken and set aside.
Add the carrots, celery, leek, onion, garlic, ginger and parsley stems and cook until softened.
Add the turmeric, chilli powder, garlic powder, onion powder, Italian herbs, pepper and salt and cook for 30-60 seconds until fragrant.
Return the chicken to the pot.
Add the stock, water, bay leaves, rosemary and parmesan rind.
Bring to a boil before reducing to a simmer and cooking for approximately 1 hour.
Remove the chicken and allow it to cool slightly before shredding the meat.
Discard the bay leaves, rosemary stems and parmesan rind.
Add the butter beans, spinach and parsley.
Return the shredded chicken to the pot and season to taste.
Pasta Tip
Cook the spaghetti separately until slightly underdone before adding it to individual bowls when serving.
This prevents the pasta from absorbing too much liquid and helps keep the soup beautifully brothy.
