This recipe is sure to be a winter favourite. It's creamy, cheesy, warm and so delicious (what more could you want in comfort food). Made with Carisma Potatoes, which are 25% lower in carbs and low GI making them so much better for you. But Don't worry, just because they are lower in carbs that doesn't mean they aren't as tasty, these potatoes are SO DELICIOUS. Grown locally by Mitolo Family Farms and sold in your local Coles, give them a go!
Creamy Potato Bake with Parmesan Bechamel Sauce
1/3 cup all purpose flour
3-4 cups of milk
2 tbsp parmesan cheese
1/2 tsp garlic powder
pinch of salt & pepper
1.5kg Carisma potato
1 brown onion
1/4 cup fresh thyme
1 cup panko breadcrumbs
2 cups shredded cheese
1/2 cup parmesan cheese
6 rashes bacon
2-3 tsp garlic powder
salt & pepper
Preheat oven to 200degrees fan forced
Prepare the Carisma potatoes by washing, peeling and thinly slicing. Set aside in a bowl.
To make the béchamel sauce simply add the butter into a saucepan and allow to melt. Once it begins to simmer mix though the flour with a wooden spoon. Once this begins to simmer, gradually add in the milk. (please note it will begin to clump, this is normal it will smooth out once all the milk has been added). Once a creamy consistency add in parmesan, garlic powder, salt and pepper and mix well. Set aside on a very low heat.
Slice the onion into very thin slices (approx. 1-2cm) and dice the bacon. Once all your ingreidnts are prepared, begin layering the potato bake.
Start by adding about 1/4 cup of the sauce into the botton of your baking dish. Assemble the potatoes so they are slightly overlapping. Season and layer with both cheeses, bacon, onion, breadcrumbs and thyme, continue this method until you have used all of the potatoes. On the top layer be extra generous with cheese and breadcrumbs.
Cover with foil and bake for 90 minutes. Take the foil off and continue to bake for another 30 minutes until golden on top.
Once you take it out of the oven allow it to sit for 5-10 minutes before slicing. Enjoy!
